For Halloween, we propose a lasagna with autumnal tones, in which the sweetness of the pumpkin marries perfectly with the flavor of our sausage .
Ingredients:

300g of Cinta Senese sausage

500g pumpkin

300 ml of vegetable broth

250g ricotta

100g grated parmesan cheese

200g mozzarella

250g fresh lasagna pasta

1 clove of garlic

Extra virgin olive oil

Salt and pepper to taste
- Fresh rosemary

Dice the pumpkin and cook it in a pan with a drizzle of oil, garlic and rosemary, until it becomes soft. Remove the rosemary and garlic, then blend the pumpkin with a fork until you obtain a puree, adding some vegetable broth to make it more liquid.

Ingredients:

300g of Sambucana sausage

400g pumpkin

1 egg

50g of breadcrumbs

50g grated parmesan cheese

Salt and pepper to taste

Sage and rosemary for garnish
Procedure:

Cook the pumpkin cubes in the oven or steam until soft. Once cooked, mash it with a fork until you get a smooth puree.

In a large bowl, combine the pumpkin puree, crumbled Sambucana sausage, egg, parmesan and breadcrumbs. Mix well until the mixture is compact.

Form small meatballs with your hands and place them on a baking tray covered with baking paper.

Drizzle the meatballs with extra virgin olive oil and bake at 180°C for about 20 minutes, turning them halfway through cooking to brown them evenly.
